I love black beans. I love them in soup, over rice, in tacos – you name it! I’ve even eaten them in brownies! When I cook with black beans (or any beans for that matter), I almost always make them from scratch, with an overnight soak and a slow-cooked simmer. But sometimes I just don’t have time for that. We all have days when we just need something ready to go Now! Right? For this recipe, my speedy secret was Better Bean‘s Cuban Black Beans (they army favorite of the Better Bean varieties.). I threw these Citrus Black Beans together in just over 10 minutes – it was so easy that it almost felt like cheating!
Citrus Black Beans can beaten as is, or served over rice. Garnish them with a little avocado and an orange slice and everyone will think you’ve been cooking all day!

- I tbls. olive oil
- ½ cup chopped onion
- ½ cup chopped red pepper
- ½ cup chopped celery
- 1 clove garlic, minced
- ½ tsp. cumin
- ½ tsp. paprika
- 1 cup vegetable stock
- 1 tsp. honey
- 1 container Better Bean Cuban Black Beans
- 2 tbls. fresh orange juice
- ½ tsp. fresh orange zest
- Brown rice, cooked
- Heat olive oil in a medium saucepan over medium heat. Sauté onion, red pepper, celery until soft. Add garlic, cumin and paprika and sauté I minute more.
- Stir in vegetable stock and honey, and then Better Beans Cuban Black Beans, orange juice and zest. Simmer 5 minutes.
